Chocolate Birthday Cake Recipe That’s Moist, Rich And Easy

Colourful chocolate birthday cake with rainbow buttercream layers

This chocolate birthday cake recipe makes a fantastic base for any themed party cake. I used my go-to chocolate cake recipe, (the same one I always use for cupcakes) and scaled it up by 1.5x to create a larger, party-ready version. It turned out perfectly moist and rich, just the way I like it.

For this version, I decorated the cake with pink, blue, and yellow butter icing. These cheerful colours made it ideal for a playful theme. Whether you’re planning a rainbow or character-inspired cake, this chocolate base gives you a solid starting point to build on. Later, I added more custom details for my customer, according to the theme they selected.

Although I’ve chosen not to share those final decorations online, there’s still plenty of inspiration out there. In fact, you’ll find lots of creative ideas on Pinterest to help you complete your own look. To make it easier, I’ve even included some Pinterest images below, so you can easily imagine how to style your own beautiful cake!

Notes

To ensure your cake is perfectly level for stacking or decorating, carefully trim the domed top using a serrated knife or for a more precise and effortless result, I highly recommend the Wilton Adjustable Cake Leveler (12 x 6.25-Inch), ideal for leveling and torting small cakes with even layers.

Ingredient Measurement Table for Chocolate Birthday Cake

To make it easier for you to scale this Chocolate Birthday Cake recipe, I’ve put together a table with all the ingredient quantities listed for 1x, 1.5x, and 2x batches. This way, you can quickly decide which size best suits your occasion without having to calculate it all. Just remember to adjust the baking time depending on the size of your cake, larger cakes may need a little more time in the oven.

Tin Guide by Batch Size
  • For a single batch (x1) or 1.5x batch, you can bake the batter in either one deep tin (and slice it in half after baking) or two shallow tins.
  • For a double batch (x2), use two tins as the volume is too much for one.

If you’re using two tins, be sure to weigh the batter so each tin has an equal amount. This helps the layers bake evenly. After baking, you can trim the tops for a perfectly level finish. Save the offcuts for Cake Pops.

For a children’s birthday party, you can cut smaller slices and easily serve double the number of guests!

Buttercream for This Cake

This chocolate birthday cake is finished with a smooth, creamy buttercream that’s perfect for both decorating and frosting.

To make the buttercream, simply beat softened butter until light and fluffy, then mix in vanilla and gradually add sifted powdered sugar (and cocoa powder for a chocolate version). Add a little milk as needed until the buttercream becomes smooth and easy to work with. For exact measurements, consistency tips, and step-by-step guidance, see: Smooth Buttercream for Cake Decorating.

For piping, aim for a slightly firmer texture. For frosting and smoothing the cake, soften the buttercream with a little extra milk until it spreads easily.

For this Chocolate Cake I prepared:

  • 1 batch of thin-consistency chocolate buttercream for filling and crumb coating
  • 1 batch of thin-consistency vanilla buttercream, divided and coloured:
    • ½ batch pink
    • ¼ batch blue
    • ¼ batch soft yellow (using minimal gel colouring added with a toothpick)

I piped the colours in sections and smoothed them using a cake scraper. To apply sprinkles on top neatly, I placed a plate over the cake and sprinkled only the exposed areas. I finished with a border of sprinkles at the base. Finish it with a fun themed topper for the perfect celebration cake!

Variations and Storage of this Chocolate Birthday Cake

Decorate with butter icing in your choice of colours. Then, add sprinkles, edible glitter, chocolate pieces, or sweets for an extra fun touch. For even more indulgence, you could include a delicious filling such as Nutella, caramel, or crushed Oreo biscuits between the cake layers. Don’t forget to finish it off with candles and a festive cake topper!

Alternatively, you can turn this into a piñata cake, a surprise-inside cake that’s especially exciting for kids’ parties. To do this, first cut a hole in the centre of the baked cake (before icing). Next, fill it with colourful M&Ms or Smarties, and finally, cover it up with the top cake layer or a generous swirl of icing. When sliced, the sweets tumble out for a delightful surprise!

After decorating, store the cake in an airtight container to keep it fresh for up to 3 days.
