Homemade Apple Cinnamon Swirl Loaf
A soft and moist Apple Cinnamon Swirl Loaf, baked with layers of apple and cinnamon-sugar and topped with a simple glaze for an enjoyable treat.

Cake:
- 1/3 cup light brown sugar (66g / 2.33 oz )
- 1 teaspoon ground cinnamon
- 2/3 cup white sugar (134g / 4.73 oz)
- 1/2 cup soft butter (115g / 4 oz)
- 2 eggs
- 1 1/2 teaspoons vanilla essence
- 1 1/2 cups cake flour (190g / 6.7 oz)
- 1 3/4 teaspoons baking powder
- 1/2 cup milk (120ml / 4 fl oz)
- 2 apples peeled and chopped
Glaze:
- 1/2 cup Icing sugar (powdered sugar)(60g / 2.1 oz)
- 2 tablespoons milk (30ml / 1 fl oz)
Preheat oven to 175°C (350°F). Grease and flour a 9x5 inch (23x13 cm) loaf tin. Mix brown sugar and cinnamon together in a small bowl and set aside.
In a stand mixer, cream together the white sugar and butter until soft and fluffy. Add eggs one at a time, beating well after each addition.
Stir in vanilla essence.
In a separate bowl, combine the flour and baking powder. Add to the butter mixture, mixing until well incorporated.
Stir in the milk until the batter is smooth.
Pour half the batter into the prepared tin. Top with half the chopped apples and half the cinnamon-sugar mixture.
Pour the remaining batter over the apple layer and sprinkle the remaining apples and cinnamon-sugar mixture on top.
Bake for 45-50 minutes, or until a tester inserted into the centre comes out clean. Let the loaf cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. For the glaze, whisk the icing sugar and milk together until smooth. Drizzle over the cooled loaf and decorate.
