Old Fashioned Banana Bread Loaf
This old-fashioned banana bread loaf recipe is the perfect way to transform ripe bananas into a moist and flavourful treat everyone will love.
- 125 g / 4.4 oz / ½ cup Soft Salted Butter
- 250 ml / 1 cup / 7.9 oz Sugar
- 5 ml / 1 tsp Vanilla Essence
- 2 Eggs
- 4 Very Ripe Bananas
- 500 ml / 2 cups / 8.8 oz Cake Flour
- 5 ml / 1 tsp Baking Powder
- 5 ml / 1 tsp Bicarbonate of Soda
- 125 ml / ½ cup Boiling Water
Preheat Oven: Set your oven to 180°C (350°F). Generously grease a loaf tin with non-stick spray. Cream Butter and Sugar: In a stand mixer, cream together the butter and sugar until light and fluffy. Add Bananas: Add the mashed bananas.
Incorporate Wet and Dry Ingredients: Add vanilla essence and eggs. Sift in the cake flour and baking powder and mix until well combined. Dissolve and Mix: Dissolve the bicarbonate of soda in the boiling water. Pour it into the batter and mix thoroughly.
Bake: Pour the batter into the prepared tin. Bake for 50-60 minutes or until a cake tester inserted in the centre comes out clean.
Cool: Allow the banana bread to cool on a wire rack.
