Old Fashioned Banana Bread Loaf

This old-fashioned banana bread loaf recipe is the perfect way to transform ripe bananas into a moist and flavourful treat everyone will love.

Ingredients
  

  • 125 g / 4.4 oz / ½ cup Soft Salted Butter
  • 250 ml / 1 cup / 7.9 oz Sugar
  • 5 ml / 1 tsp Vanilla Essence
  • 2 Eggs
  • 4 Very Ripe Bananas
  • 500 ml / 2 cups / 8.8 oz Cake Flour
  • 5 ml / 1 tsp Baking Powder
  • 5 ml / 1 tsp Bicarbonate of Soda
  • 125 ml / ½ cup Boiling Water

Instructions
 

  • Preheat Oven: Set your oven to 180°C (350°F). Generously grease a loaf tin with non-stick spray.
  • Cream Butter and Sugar: In a stand mixer, cream together the butter and sugar until light and fluffy.

  • Add Bananas: Add the mashed bananas.

  • Incorporate Wet and Dry Ingredients: Add vanilla essence and eggs. Sift in the cake flour and baking powder and mix until well combined.

  • Dissolve and Mix: Dissolve the bicarbonate of soda in the boiling water. Pour it into the batter and mix thoroughly.
