South African Crumpets

These irresistibly fluffy South African crumpets are the ultimate breakfast treat, perfect with golden syrup and fresh fruit.

Ingredients
  

  • 250 g cake flour 2 cups / 8.8oz
  • 150 g sugar ¾ cup / 5.3oz
  • 12 g baking powder 3 teaspoons / 0.4oz
  • 3 large eggs
  • 240 ml milk 1 cup / 8.1oz
  • A little butter (for frying)
  • Some Golden syrup and blueberries (for serving)

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, and baking powder.
  • Add the eggs and milk, stirring until a smooth batter forms.

  • Heat a non-stick frying pan over medium heat and grease lightly with butter.
  • Drop small amounts of batter into a greased circle cookie cutter for even shapes.
