Garlic and Herbs Cottage Cheese
Ingredients
- 2 cups / 500g / 17.6oz Cottage Cheese
- 1 small Onion chopped into small cubes
- 4 cloves of Garlic crushed
- Herbs: a hand full of parsley and ½ a hand full of dill finely chopped (use a mezzaluna if you have one)
- 1 level teaspoon of Salt
- ½ teaspoon of Black Pepper
- ½ cup / 120g /4.2oz of Cream
- ¼ teaspoon of Caraway Seeds
- 1 or 2 Baguettes
Instructions
Prepare the Ingredients:
- Chop the onion into small cubes. These are the best knives to use – Victorinox Paring Knife Set
- Crush the garlic.
- Finely chop the herbs using a Mezzaluna Chopper.
Mix Everything Together:
- Place all the ingredients in a bowl and mix well.
Prepare the Baguettes:
- Preheat the oven to 400°F (200°C).
- Place 2 tablespoons of butter and 2 tablespoons of olive oil in a bowl and microwave for 30 seconds.
- Brush the butter/olive oil mixture on the sliced bread and place it on a baking tray. Put it in the oven for 10-12 minutes until lightly toasted.
Serve:
- Spread the herb cottage cheese mixture on the toasted baguette slices.
- Garnish with sliced cherry tomatoes, cucumber, and chives.
