Peppermint Crisp Pudding

Peppermint Crisp Pudding is a no-bake dessert made with whipped cream, caramel treat, mint chocolate, and a biscuits base.

Ingredients
  

  • 500 ml / 2 cups / 16 oz Whipping Cream
  • 2 tins Nestle Caramel Treat
  • 2-3 Mint Chocolate Bars or 4 Peppermint Crisps
  • 1.5 - 2 packs of Bakers Nutticrust / Tennis Biscuits

Instructions
 

  • Whip the cream using a Kitchen Aid stand mixer or hand mixer until stiff peaks form.

  • Set aside some biscuits for decorating. Crush the biscuits in a food chopper or place the biscuits inside a sealed zip-lock bag and crush using a rolling pin.
  • Place ½ the crushed biscuits in a serving bowl.
  • Spread ½ the Caramel Treat on top.
  • Spread ⅓ of the whipped cream on top.
  • Place the other half of the biscuits and Caramel Treat onto, ending with the ⅔ of whipped cream.
  • Top with the roughly chopped biscuits and mint chocolate.

Notes

  1. Optional: Add some chopped chocolate into the layers for extra minty flavour.
  2. Note: This pudding can also be made in small bowls or glasses for individual servings.
