How to Make these Éclairs
Step 1: Prepare Choux Pastry and Pastry Cream
First prepare and cool the Pastry Cream according to the recipe. Tip : The pastry cream can be made ahead and chilled, making assembly quicker.
Then, prepare and bake the choux pastry according to the recipe.
Immediately after baking, cut off the tops of the éclairs and place them on a wire rack to cool completely.
I had a little baking mishap with the chocolate éclairs featured in the photo above. I forgot to slice them open right after taking them out of the oven, and once they cooled, I couldn’t open them anymore. Thinking quickly, I sandwiched two shells together with the filling in between. They still looked beautiful in the photos and tasted delicious. Sometimes in the kitchen, we just need to get creative and stay flexible.
Step 2: Assemble the Éclairs
Melt the chocolate in the microwave in 30-second intervals, stirring after each interval. As the chocolate begins to melt, reduce the time to 15-second bursts, stirring well between each, until smooth and glossy. Dip the tops of each éclair into the chocolate, coating them evenly. Finish with a sprinkle of crushed Chuckles or Maltesers. Let the chocolate set completely.
Fill each éclair generously with the prepared pastry cream using a piping bag. Ensure that the filling reaches every corner for a creamy, indulgent bite.

Baking Tips for Chocolate Éclairs
- Avoid opening the oven too early, because this can cause the pastries to collapse.
- Bake the shells ahead of time, store them in an airtight container, and then fill them just before serving to keep them crisp.
- For neat and consistent results, use a piping bag when filling the shells.
Éclair Topping Ideas
- To begin, you can use dark, milk, or white chocolate. Decorate with pieces of Kit Kat or crushed Oreos for extra crunch
- Additionally, you can enhance the flavour by infusing the chocolate with coffee or by drizzling caramel over the tops.
- Alternatively, you can choose a classic chocolate-icing glaze instead of melted chocolate.
Éclair Filling Ideas
Éclairs are traditionally filled with silky vanilla pastry cream, but there are so many delicious variations you can try. You can keep it classic or switch things up depending on the occasion.
Here are a few ideas:

- Chocolate pastry cream – rich and extra indulgent for chocolate lovers
