Chocolate Cupcakes with butter icing

Heavenly Butter Icing

Butter icing is a smooth, creamy frosting perfect for adding a luscious layer of sweetness to cupcakes, cakes, and other desserts.

Ingredients
  

  • 250 g / 8.8 oz Butter
  • 1 kg / 8 cups / 35,2 oz Icing Sugar
  • 75 ml / ⅓ cup / 2.5 oz milk
  • Flavouring to taste but for chocolate approximately 2 Tbsp Cocoa
  • Colouring

Instructions
 

  • In a Kitchen Aid stand or hand mixer, beat the butter until it is soft and creamy.
    Cream butter until light and fluffy.
  • Sift and add the icing sugar to the butter.  Add milk. To prevent the icing from dispersing and creating a mess, cover your mixer with a clean dish cloth while mixing.

  • Mix in your chosen flavouring and colouring, then beat for approximately 5 minutes until the mixture is thick and creamy. The icing should be stiff enough that a spoon remains upright when inserted. Adjust the consistence with a small amount of milk or icing if necessary.
