Ingredients
  

Cake:

  • 1/3 cup / 66g / 2.33 oz light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup / 134g / 4.73 oz white sugar
  • 1/2 cup / 115g / 4 oz soft butter
  • 2 eggs
  • 1 1/2 teaspoons vanilla essence
  • 1 1/2 cups / 190g / 6.7 oz cake flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup / 120ml / 4 fl oz milk
  • 2 apples peeled and chopped

Glaze:

  • 1/2 cup / 60g / 2.1 oz icing sugar (powdered sugar)
  • 2 tablespoons 30ml / 1 fl oz milk

Instructions
 

  • Preheat oven to 175ยฐC (350ยฐF). Grease and flour a 9×5 inch (23×13 cm) loaf tin.
  • Mix brown sugar and cinnamon together in a small bowl and set aside.

  • In a stand mixer, cream together the white sugar and butter until soft and fluffy.

  • Add eggs one at a time, beating well after each addition.

  • Stir in vanilla essence.

  • In a separate bowl, combine the flour and baking powder. Add to the butter mixture, mixing until well incorporated.

  • Stir in the milk until the batter is smooth.

  • Pour half the batter into the prepared tin. Top with half the chopped apples and half the cinnamon-sugar mixture.
  • Pour the remaining batter over the apple layer and sprinkle the remaining apples and cinnamon-sugar mixture on top.

  • Bake for 45-50 minutes, or until a tester inserted into the centre comes out clean.
  • Let the loaf cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
